FALL 2020 HONEYCOMB HARVEST! This honeycomb has simply been cut out of our hive frames (we have not done anything else to it). The dark comb has been used by our bees to raise brood (worker bees) first before getting filled with honey. These comb cells tend to gather more propolis, a compound produced by bees that is thought to be anti-viral, anti-bacterial, anti-fungal, and antiinflammatory. The dark comb tends to have a firmer texture and a richer, deeper, earthier flavor.
Our honeycomb is raw, unfiltered, unprocessed, unheated and untreated. Because our honeycomb is completely raw, it is a live food product and is packed full of healing enzymes and antioxidants*. Our beekeeper Don is the only one in Colorado (to our knowledge) who raises Certified Naturally Grown honey. We bring it to you with the fewest steps possible between the hive and your home.
We have a very limited supply of comb since we choose to leave a full 90 pounds in each hive for the bees to feed on over winter. Crystallization in raw honey is normal and an attribute of pure and natural honey. Crystallization tends to happen more in colder temps, so here in Colorado where our weather is unpredictable, it is likely that your honey may arrive partially crystallized.
*Raw honey should not be given to children under the age of one.
