Buying local matters for more reasons than one. Pigs, their name alone dredges up a certain mental association, and they have gotten their reputation for a reason. They do tend to eat just about anything they're given. I’m a little embarrassed to admit this: I, like many of you, used to think that I didn’t like lamb. I was never a fan of the "lamb" that appeared on our holiday table lurking beneath an undulating glob of mint jelly (don’t tell my mom I said that). Well, I have news for you. That wasn’t grass-fed, grass-finished lamb we were eating.
