Recipe: Pasture-Raised Italian Pork Meatballs -Air Fryer-
This past week has been insane! We've welcomed home our oldest daughter who's been living in Europe for the semester, as well as moving our entire family a little further west, and trying to prepare for the holiday coming up. Total chaos to say the least. However, the highlight of the week was a lesson from my daughter in fresh (gluten-free) linguini making. This sweet girl brought me home an entire suitcase full of Italian gluten-free pasta flour along with a *top secret* pasta recipe from an Italian mama also with a daughter with celiac disease.
The real question was what to pair the pasta with? We settled on some super quick and delicious Italian Air Fryer Pasture-Raised Pork Meatballs.
Italian Air Fryer Pasture-Raised Pork Meatballs:
1 lb Kristin's Farm Stand Ground Pork
1 lb Kristin's Farm Stand Ground Pork Sausage
1 Pasture-Raised Egg
3 TBS Almond Flour
1 tsp fresh chopped garlic
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp ground pepper
1/2 tsp Himalayan salt
-Mix all together and form meatballs.
-Preheat air fryer. Spray air fryer with avocado oil.
-Air fry for 8-13 mins depending on the size of your meatballs.
